Fruit hand-picked, 10% whole bunches, 90% whole berries.
Whole berry ferment in two small open stainless steel vats. Hand plunged twice daily.
75% - Ferment + PFM: 21 days on skins.25% - Pressed at 1°Bé to barrel.
Natural malolactic fermentation in barrel.
Matured in old French hogsheads for 11 months - no racking.
Minimal sulphites added only at bottling. No filtration. No fining. (Vegan)
Alcohol by volume - 13%
