Mean January Temperature 20 degrees Celsius. Harvest date 9 March 2016. Fruit was hand-sorted, 100% de-stemmed, not crushed. Whole berry ferment in a single small open stainless steel vat. Hand plunged twice daily. Pressed straight to barrel with full solids after 7 days to finish ferment in barrel. Malolactic fermentation occurred naturally in barrel. Matured in old French hogsheads for 11 months - no racking. Minimal sulphites added at bottling. Minimal filtration. Not fined. Vegan friendly.
