Clone PT23 planted in 1999. Low yielding – 2.8 tonne per acre.
Altitude 243m. Average growing season rainfall 267mm. Mean January Temperature 21 degrees Celsius.

Harvested 11th March 2017 @ 14.5°
Fruit hand-sorted, 100% de-stemmed, not crushed.
Whole berry ferment in a single small open stainless steel vat.
Hand plunged twice daily. Ferment + PFM: 47 days on skins.
Natural malolactic fermentation in barrel.
Matured in old French hogsheads for 11 months - no racking.
Minimal sulphites added only at bottling. No filtration. No fining. (Vegan)
Alcohol by volume - 14.3%
