Serpentine Vineyard, Bendigo GI. Latitude 36 degrees 29’ South.
Clone PT23 planted in 1999. Low yielding – 2.8 tonne per acre.
Altitude 243m. Average growing season rainfall 267mm. Mean January Temperature 21 degrees Celsius.
Harvest date 15 February 2016.
Fruit was hand-sorted, 100% de-stemmed, not crushed. Whole berry ferment in a two small open stainless steel vats.
Hand plunged twice daily. One vat received an extended post ferment maceration – one month on skins.
The other vat was pressed direct to barrel.
Malolactic fermentation occurred naturally in barrel. Matured in old French hogsheads for 11 months - no racking.
Minimal sulphites added at bottling. Minimal filtration. Not fined. Vegan friendly.
