FARSIDE SYRAH 2017

Kennedy Vineyard | Colbinabbin, Heathcote.

Handpicked on 15th March 2017 @ 13°

10% whole bunches, 90% whole berries.
Whole berry ferment in two small open stainless steel vats.
Hand plunged twice daily. 75% - Ferment + PFM: 21 days on skins. 25% - Pressed at 1°Bé to barrel.
Natural malolactic fermentation in barrel. Matured in old French hogsheads for 11 months - no racking.
Minimal sulphites added only at bottling. No filtration. No fining. (Vegan) ABV 13%

127 dozen produced.

Harvested on 11th March 2017 @ 14.5°

Fruit hand-sorted, 100% de-stemmed, not crushed. Whole berry ferment in a single small open stainless steel vat.
Hand plunged twice daily. Ferment + PFM: 47 days on skins. Natural malolactic fermentation in barrel.
Matured in old French hogsheads for 11 months - no racking.
Minimal sulphites added only at bottling. No filtration. No fining. (Vegan) ABV 14.3%

Straw’s Lane Vineyard | Hekset, Macedon Ranges.

Harvested 24th April 2017 @ 11.5°Bé. TA 8.5 gL-1.
Hand-picked and sorted, de-stemmed and crushed. 3 hours skin contact before gentle pressing.
Barrel fermented outside over 21 days. OFF DRY - Fermentation stopped with approx. 10g residual sugar.
Not fined, sterile filtered then bottled with minimal sulphites. VEGAN. ABV 11%

62 dozen + 100 magnums produced.
